Common tomato varieties / good for canning?

This is the second year I've been gardening and last year I grew a couple varieties of tomatoes to see how they would do in my garden. They were great! I'm going to do more plants this year and want to can some for sauce/salsa. Does anyone have suggestions for good canning tomatoes that are common? I plan on buying plants so less common varieties won't work for me. Thanks!

  • generally paste-type tomatoes are the ones for canning (this is basically anything Roma tomato-shaped...including Romas!)

    however, I've used whatever tomatoes I've had leftover for canned salsa.  I just take the guts out b/c non-paste tomatoes have a higher water content anyways.

  • Roma tomatoes are good for canning. You could probably use any kind of tomato for salsa. Yum!
  • Ditto the paste tomato rec for canning. They are also my favorite for salsa, because they are less watery, and the skins are SO easy to get off (blanch, cut off the top and they pop right out!)

  • I grow the tomatoes i like eating and can whatever I have left.  I just make sure if they are especially juicy to squish out the excess tomato water before I can them or use them in salsa.
