Question on making chocolate party favors

I've made a lot of chocolate favors over the past few years using those plastic squirt bottles made by Wiltons. But it hasnt' always gone so smoothly. I've followed some online instructions that say to put the chocolate pieces in the bottle, put the whole bottle in hot water, and squish around until the chocolate melts...and then fill the molds. Ok fine except 1) it takes SO LONG, and 2) the chocolate hardens and gets stuck in the mouth of the bottle, you know what i mean?

so what's an easy(easier) way to do this then? Double boiler? If i do that, then won't the chocolate harden before i am quick enough to get it into the molds? I have to make more than 50 chocolate favors for a party at the end of the month and I'm hoping to find an easier way to do this!

I'm totally not doing a good job explaining this! Embarrassed

  • When I do this, I alternate two bottles so that when one gets too firm, I can swap to the other.  I keep a saucepan of water on medium heat (not boiling) so that I can swap the bottles around.  Not re-boiling the water with the chocolate is very important because it will change the texture of the chocolate.
