crockpot = one nap away from a meal
Is there a crockpot recipe website or blog that anyone will share with me?
Do you have any favortie crockpot recipes you'd share with me?
I pulled my crockpot out today and have fallen back in love with how easy it is to make a good meal. I made a kick-arse beef stew (ala-filipino Caldareta).

One of our ALL time faves is Salsa Chicken. I've gotten a few people hooked on it. Take frozen chicken breasts, put it in the crockpot. Pour salsa over it. Go to work, come home to dinner.
You can shred up the chicken and make tacos, enchiladas or just put it over rice. YUM-O
LOVE the crockpot. I have a crockpot recipe book. You can also go on allrecipes.com (I think that's the site) and choose crockpot recipes.
My fave is a variation of the one that Jayme posted. Carnitas - Uses pork shoulder but often we will get beef. I bottle or can of beer, one 16 oz jar of salsa and 12 oz chicken broth (fill up the empty beer bottle to figure oz). I let it cook all day. Then you can make tacos with it. Soooo good!
We've been doing the salsa chicken for years and love it. You can add some tortillas and rice to make wraps or just do a veggie and eat the chicken as is.
I like a roast for cold days. Fill the bottom of the pot with baby carrots, set roast on top, add beef broth, season to taste. You can also mix in diced potato with the carrots. (Can you tell that when I use the Crock Pot my goal is to not have to cook at all?)
Apple chunks on the bottom of the pot, boneless pork chops on top, add apple juice for liquid, and sprinkle cinnamon over meat. Yummy and oh so tender.
Almost any soup can be done in the Crock Pot.
