Have you eaten dandelion?
I have found several recipes for dandelion tea, wine, syrup, fritters, coffee, soup, and salads. Now I just have to find enough (non-sprayed!) dandelions to dig up and experiment with!

I remember being a kid and having to pick dandelions in my parents yard for salads. My mom made something similar to this http://www.tasteofbeirut.com/2009/05/hindbeh-aateh-dandelion-salad/ and would also add them to fattoush (a Lebanese salad that doesn't usually use dandelions).
I've started noticing them at the co-op recently, too.

I usually make copious amounts of dandelion syrup (500 heads a batch) or use the fresh young leaves in risotto.
I have also made pesto from them. You want the young leaves, the older ones are too bitter.

supergreen- did you learn any recipes in that class? I have a recipe book for wild edibles that are in the great plains area.
Last summer my dad and I collected, wild plums, mulberries, chokecherries, ground cherries, elderberries, rose hips, and mushrooms. This year I have many more things on my list to go searching for. We're having our (hopefully) last couple inches of snow dumped on us today, and tomorrow it's supposed to be in the 50's. I just want it to warm up so I can go collecting!!
