I learned my lesson the hard way, of course.
I was making french fries last night, which I've done plenty of times. My H reminded me to be careful b/c oil and the stove can be dangerous. I reassured him, reminding him that I was aware. Well, I let the oil get WAY too hot so when I placed in a handful of potatoes, the oil boiled over on to the stove. Of course I freaked out fearing the oil to catch on fire and burn down my house, so I moved the still over-flowing pot of oil to the sink where I poured it half out, and the sink then started to seem like it was exploding b/c the hot oil was now messing with my cold sink that had some water it in. What a disaster. We were able to get it under control quickly but thankfully my H was still in the kitchen with me. Took me an hour to clean up the mess on the stove/floor/counter top tho. I was scuuuuuured, fo sho. Lesson learned... I will be sure not to let the oil get too hot. WOW. That would have been crazy had it got out of control. And, then I told my H he jinxed me b/c I have made french fries so many times without incident. Just happy it wasn't a serious problem.

Oh no! I'm glad you're OK. As I read your post, all I kept thinking was "please don't tell me you poured water on it!" I have burn scars from culinary school because a dope in my class threw an icecube into a pan with oil that was overheating while I was near it and it literally blew up. Mythbusters did a sequence on hot oil with water, and it was scary! They dumped 1 cup of water into a pot with a quart of boiling oil, and it launched a fireball 2 storys up!
I always keep a GIANT box of baking soda near my stove because I'm so afraid of oil fires.

Im the same with City and always have baking soda in the fridge for quick access.
Girl go get yourself a deep fryer!!! Then all that oil is contained!!
agreed! presto makes a great one. the cool daddy is small and fairly cheap.. and it doesn't get hot! (well, the oil does, but not the fryer)

Do you use a thermometer to gauge the temperature of the oil when you're frying? We have a candy thermometer for when we fry inside the house (which isn't often) and a super long one for when we deep fry in the outdoor wok.
