What is on yours?
We are doing grilled salmon, roasted veggies, and crusty bread. We need a starch. Last year we did baked potatoes. I started them before we went to church and finished them off when we got home. I need something that I can quickly cook or have prepped ahead of time, so all I need to do is pop it in the oven. Any suggestions.

What about pasta of some sort? It would be pretty quick to prepare.
I'm looking forward to reading the replies in this post. I am hosting Easter this year (first holiday ever!) and I have no idea what we're having. But that is in part because I don't yet know if we're having a dinner on Saturday or a brunch on Sunday. Still awaiting confirmation of my family's schedules.
We're having ham. Not a huge fan of it, but that seems to be the norm for my family and this holiday. Scalloped potatoes, broccoli and rice casserole, and I need to come up with some sort of salad/veggie side that isn't another carb.
MB, my mom makes her scalloped potatoes the night before, leaves them in the fridge and pops them in the oven to bake the day of. My sister does the same thing with her broc n' rice casserole - which actually makes it so that you don't have to cook the rice prior to baking b/c it soaks in the juices all night long.
How many people is this for? If a large group, I would do a creamy potato gratin.
For a small group - how about risotto cakes? We had them at Great Lakes Shipping Co. a couple weeks ago and they were so yummy. You could prep them the day before and than pan fry them right before you are set to eat.
Excellent question. We do dinner at Nick's Greek side of the family and the food is amazing! Usually some kind of smoked/grilled lamb, lemon and herb potatoes, spanakopita (spinach pie), dolmathas (stuffed grape leaves), Greek style salad, and other goodies I either don't remember or can't pronounce.
What about a vinegar based potato salad?
