Cake bakers

Okay I'm gaining confidence with my baking skills. The new oven is helping a lot. So - I want to take another stab at a layer cake for DH's birthday on Saturday.

Any tips for baking/decorating? 

I need to stick the cake in the freezer before frosting the outside, right? 

What else?

Any great "must-try" recipes? He likes everything except carrot cake.

  • My favorite is my Red Velvet 4 layer cake.  It doesn't have the typical cream cheese frosting, it is better (IMO) but does take more work.  Let me know if he likes Red Velvet and I can get you the recipe!!!

  • Put a crumb layer of frosting on the cakes, then freeze. That makes the frosting look professional! I LOVE red velvet cake with a marshmallow frosting! Oo...german chocolate is fun too! I never ate the one I made, but everyone said it was good! How about taking a stab at champagne cake?! That's next on my list!

  • Awesome- I have a great recipe!!  I will grab it tonight, and get it to ya tomorrow.  I agree with the crumb layer- esp with red cake and white frosting.  Doing one makes the cake look so much more professional when the final icing is done.  I make extra frosting just in case also (but some of that is for me to eat off the beaters!!!- so good and not too sweet!)

  • I've never frozen my cakes.  Definitely do a thin crumb coating, let it dry, and then do the real coat.  Red velvet with cream cheese frosting sounds delicious!

  • You've got great tips already!  have fun and enjoy.  Make extra frosting, as I always use more than I think I will...  It also helps to have one of those really long frosting "knives"  I have one you can borrow if you don't need it for a few days.  Mine's about 8-9 inches, so it makes it easy to have a flat "scrape" across the top of the cake to make it flat.

    I actually have one of those and a spinny cake plate thingy. Don't ask me why, but I do.  lol
