Ladies who cook several meals ahead for the week...
What do you make? I'm going back to work next week, and I want to make a few things this weekend to have for the week so I'm not stressing about dinner when I get home from work my first week back. TY.

Whatever I would normally cook during the week, just more ;-) This week we have Root Beer Pulled Pork and Orange Glazed Chicken Wings feeding us for 4 days.
Baked Ziti, other pasta dishes, casseroles all last very well. So do most meats I find like the pulled pork, drip beef, baked/braised chicken, etc.

I don't get all into it like some people do, but I usually have a frozen dinner standby in the fridge. We have white lasagna a lot (spinach, chicken, white sauce) and I usually have some frozen turkey meatballls to toss with sauce and spaghetti. I also usually have frozen calzones mostly for lunches because they freeze so well and can be baked & ready without any work in 20 minutes. If you google "once a month cooking" you can find plenty of blogs dedicated to the topic with lots of recipes.
Mostly though, I just prep things when I go to the grocery store. I chop up my veggies, brown any ground beef for the next couple of days, roast a chicken to use for sandwiches, wraps, and salads, etc.
Soups, stews, and casseroles hold up well. You can freeze extra portions for meals at a later date. The crockpot is your friend. One of my standbys is salsa chicken ... black beans, corn, salsa, 3-4 chicken breasts, cumin, and whatever else I have (lime juice, mangoes, etc) cooked on high for about 4 hours or until the chicken shreds. I made it on Sunday and we are STILL eating it.
Have you seen Rachael Ray's 5 meals in one day show? I am not sure what the name of the show is, but it looks interesting. It's on Sunday morning 9-10am on the Food Network. She does a lot of make-ahead meals.

Couple of things that I do that help
I try to pick things for during the week that are quicker cooking and save the longer cooking things for the weekend. I prep as much as I can on the weekend so that when I get home to work I don't have to worry about chopping/prepping I just have to cook. I also try to make extra so that we have leftovers at least one night.
