either way, here are some recipes you might like (i love).
Chicken Taco Burgers:
ground chicken mixed with a bunch of finely diced scallions, pepper flakes, 2 garlic cloves, chili powder, cumin, and a tablespoon or so of cornmeal. and salt and pepper! mix together and (for one burger) divide into two equal patties. on the top of one patty, put shredded cheese of your choice then top with second patty and smush together to make one stuffed patty. grill or broil or pan fry and put on a low carb bun or a tortilla with some home made quac!
string bean chicken salad:
sautee some diced up chicken breast with salt, pepper, some lemon and fresh garlic. meanwhile, parboil a bunch of string beans. once the beans are cooked most of the way (but still have a little bite!), mix them in a bowl with the cooked warm chicken. sprinkle with salt, pepper, and squeeze with lemon. then toss in a handful of reduced fat feta, a diced avocado, and some diced tomato (i always leave out the tomato). SUCH a delicious, healthy, low carb, low calorie, low point meal!
