easy easter desserts?

What are your dessert staples? I don't cook often and this is the first time I'm cooking for a holiday for my in laws. I need to impress but not over extend. Ideas?

  • I made lemon cupcakes with lemon frosting. But I made them from scratch. What you could do is buy cake mix and make your own buttercream frosting and pipe your own cupcakes. It's super easy and looks 'fancy'. Buttercream frosting is pretty much vanilla, butter and confectioners sugar. I use a star tool and a pastry bag to pipe the frosting on. you can get those at a craft store for under $4.00
  • Also have a recipe for lemon pie and it's super easy....my family likes lemon! Haha!!! I also LOVE party cake with creamcheese frosting or you could take regular brownie mix and doctor them up by adding in candy, chocolate, toffee, nuts, etc. If you're a chocolate fan, I suggest chocolate cupcakes with pb frosting. I make from scratch, but you could totally use the box stuff and make your own frosting. Homemade pb frosting is so delicious!!!!
  • In the trifle theme- death by chocolate:

    devil's food cake, plus chocolate pudding, homemade whipped cream, layered, and topped with chocolate sprinkles.

    Cheesecake isn't hard.  It takes a bit but doesn't really require lots of skill.  I make this one, with or without the glaze:

  • I second, or third, the trifle idea. I make one with brownies, chocolate pudding, Coolwhip (or you could be gourmet and make your own whipped cream), and crushed heath bar. People go crazy for it, and it's the easiest thing ever.

    Another suggestion: Strawberry pies

    1 can sw condensed milk

    1/3 cup lemon juice

    2 cups sour cream

    2 cups strawberries, sliced (I usually add more)

    16oz Coolwhip

    2 pie crusts

    Mix milk and lemon juice. Fold in sour cream & 8oz Coolwhip. Add in strawberries and stir. Pour mixture into pie crusts and chill overnight. Before serving top with remaining coolwhip (and some sliced strawberries, if you just feel like decorating.)

  • My family makes this every year for Easter, it's super easy - but to DIE for.

  • We always have pound cake with whipped cream and coconut, it's very simple but tasty.
  • All awesome ideas! Thanks ladies! DH found a recipe on the Hershey's website (go figure) and I'm going to be doing that:
