Okay, someone tell me what tomake for dinner tonight....

 Honestly, I don't mind cooking at all. I just can't stand trying to figure out WHAT to make. Bleh.

  • I'm horrible at meal planning. Tonight I have boneless/skinless chicken thighs marinating in teriyaki. I'm going to grill them and we'll have spring rolls and broccoli as sides.

  • I've done two crockpot meals this week (3 nights worth of dinner) because I didn't feel like cooking. That doesn't help you right now though. I did a panko crusted salmon on Monday that was easy and delicious, I'll send you the recipe if you want.

    I'm thinking I might make up something fried-rice-related and throw in random crap. This usually ends in disaster since I'm not that good of a cook, but OH WELL. lol

    I know you already said you were making rice, but my suggestion was going to be pasta with chicken, sundried tomatoes, spinach and cheese w a light cream sauce. 

  • Breakfast is always my go to when I don't feel like cooking. Tonight is pancakes, scrabbled eggs and turkey sausage.

    And the sundried tomatoe/chicken/spinach pasta sounds AMAZING. As does breakfast. :)

    DH doesn't get home till 8ish tonight after his class.. I'm making the rice now since I've read that it helps if you put freshly-cooked rice in the freezer before stir-frying it. Weeeeeeeeeee'll see!

    I hope so! I'm also making fried rice w/ brown rice. I've never made fried rice before and this is only my 2nd time grilling chicken, so we'll see.

    It was okay. I made the instant rice and just left it at room temperature. I scrambled 2 eggs in the wok then set them aside. I put 2 tbs of oil in the wok and added the rice. I stirred it around for about 5 minutes and then added the eggs. I also added some fresh garlic, green onions and soy sauce and kept cooking for about 10 minutes.

  • Yum!  I love making fried rice.  I usually put pineapple tidbits, golden raisins, egg and carrots, sometimes cashews.  (it's how our favorite thai place makes it, we love it!)  If I'm making it as a meal...I'll add whatever leftover meat we have. 
  • I think I must've done something wrong bec mine was nothing like real fried rice. It was still tasty... but it was just like drier-than-normal rice with yummy stuff mixed in. I think maybe you need more oil to really fry it? Idk if I'm willing to make it that much worse for me, so I'll probably stick to my sorta-fried rice. hehe
