I am recovering from a Nyquil bender. It will definitely be a lazy morning for us.
The most fun thing I have to do is plan my menu for my Bunco group on Wednesday. Yeah, pretty late. Two of the ladies have requested margaritas and Mexican. The last time I hosted I served black bean soup and taquitos. So even though that was last year and everybody liked it, I would like to do something different. Also - Henry's bday menu included chicken enchiladas so I don't want to do that again. Any suggestions? There will be 12 women and i would like to keep it fairly simple

I had such a great weekend. Too much time spent having fun, not enough time spent sleeping. I am exhausted, but it was worth it!
Hoek - I am no help as I think Mexican and margaritas sound perfect. I had a few margaritas on Saturday night - they were delish.
What about make-your-own nachos?
I had Margaritas on Saturday night too! Ha. I definitely want to do Mexican and Margaritas - I just don't know what to serve. I am about to thumb through my Rick Bayless Mexican Everyday cookbook for some inspiration.
Or chicken tortilla soup? This is a good recipe.
Hmmm - I'm digging the spin on a taco bar. A nacho bar. I didn't mention that it kind of needs to be ready to eat, though. We get together at 6:30 and then start rolling the dice at 7.
Mmmm...fajitas and margaritas sound awesome. Don't forget the grilled/sauteed peppers!

You can always grill the chicken the night before and warm it back up when you sautee your onions. Super easy.

Any thoughts with the announcement that Bin Laden was killed last week? - I'm glad we finally caught him so no more lives can be lost both in seeking his capture and by whatever plans he may have had to harm more innocent people.
Anyone have anything of interest going on here at home? Hoping to meet w/a family friend builder to start planning out how to finish our basement this week! Other than that we've just been busy with some friends and family matters and our usual life commitments.

I really want to finish our basement (the only thing left to do down there is put in the bar). I drew up some "floor plans" for the it last week. Unfortunately, I have no idea how to lay out a bar.
It's already plumbed for everything, so I have an idea of where the sink will go, but that's about it.
I agree - nacho or taco or fajita (my immature brain still pronounces this Fah-Jiy-Tah, even when reading in my head) is usually pretty easy!

A bar will be in our plans too. :-) We have a rough idea of what we want and it's rough plumbed in so we know where the bathroom will go and we'll kind of leave it open - we just want some *real* advice and direction before we go ahead.
Fun. I wish I had someone to consult. I just need a place to start...maybe you can share some of your wealth after your meeting. Haha.
Bars in basements rule! You both will have so much fun with your bars.
Sadly, we could never have one. Making someone drink in our basement would be a special kind of torture only seen in horror movies.
It's my best friend's dad, so he told us he'd only charge us a few Busch Lite's to come over and chat with us. :-)

The bar would have come in handy this weekend. We had a bonfire in our backyard, and we were drinking margaritas. It kinda sucked having to walk through the basement slider, through the basement, up the stairs, to the kitchen to make the margaritas in the blender, and then try to carry them all the way back.
The bar will be going in right next to the slider in the basement - much more convenient location.
Do you have a from scratch recipe you use for your margaritas? Or do you use a mix? IF so, which one do you prefer?
I used this on Saturday
and everyone loved it. One person mentioned that she thought it was great for a mix as often times the mixes are too sweet, but this one was just about perfect. I squeezed in a little fresh lime as well.
I need a margarita now, STAT.
My basement is Dh's man cave...deer antlers, duck decoys, and soon to be a full deer head and shoulders on the wall. It almost needs a bar to make the decor tolerable!
Eek! This is one of the reasons I'm glad H doesn't hunt. Haha.
There were deer antlers hung on the wall in the garage of the foreclosure we just bought...so I own some deer parts by default. We'll probably be throwing them in the dumpster tomorrow.
You need to turn one of those things into a bottle opener, too.
