Please share your spring rolls with curry sauce! They were so delicious and a nice healthy counterpart to my casserole.

Sure! They got a little cold, so I promise they're better piping hot! The filling is also amazing in enchiladas with regular red enchilada sauce.
Sweet Potato and Black Bean Eggrolls with Mango-Curry Yogurt Sauce
Eggrolls, makes 21:
1 package of egg roll wrappers
2 large sweet potatoes
1 yellow onion
2 garlic cloves
Salt and black pepper
2 tsp. cumin
1 tsp. chili powder
1/2 tsp. cinnamon
1 15 oz. can black beans, drained and rinsed
2 c. shredded sharp cheddar cheese
Olive oil
Dipping Sauce:
1/2 very ripe mango, chunked
1 heaping tbsp. curry powder or paste
1 c. plain greek yogurt
Juice of 1/2 lime
Salt and black pepper
Heat a large skillet over medium. Add 1 tbsp. EVOO. Peel sweet potatoes, shred and add to skillet. Mince onion and garlic, add to skillet. Season with salt and pepper, toss and cook for 10 minutes, until sweet potatoes are softened. Add to a mixing bowl, add spices, black beans and cheese, stir to combine. Taste and adjust seasonings.
Lay eggroll wrappers on a cutting board, spoon 1/4 c. mixture into the center, roll and place on a baking sheet. Repeat until all wrappers are used. Using a pastry brush, brush egg rolls with olive oil.
Place in a 375* oven and bake for 20-30 minutes, until browned and hot.
To make sauce, add all ingredients to a blender, taste, adjust seasonings and serve.
