So.. since I missed bff's dd's bday party on Sat since I had to work and couldn't get out of it and then on top of that I completely flaked on bffs sister's bridal shower on Sunday (no excuse, I'm just a friggin spaceshot lately) I'm having the three of them over to celebrate both things.
I plan on making my spinach and artichoke dip that they LOVE and also a berry trifle for dessert that they also LOVE (and normally make both for all potluck occasions with the family). What do you think I can do for dinner? I'm drawing a blank.. I want it to be casual but special. I have to work till 2 so it's gotta be something fairly easy.
I was thinking chicken cesar salad.. but is that too blah?

I think chicken caesar salad is kinda boring for a dinner with friends. You could do a caesar salad with dinner, though. Its more of a lunch entree on its own, IMO.
Why not make PW chicken pot pie? you can prep it the night before, and then throw it in the oven when u get home. I use store bought crust and is a definite favorite in our house. I can't remember if you tried the Italian Drip Beef or not, but something tells me the name grosses you out...anyway - its good and you can make that in the crock pot, served on nice crusty rolls, with the caesar salad and maybe some sort of oven roasted potato for a side.
Orzo with Parmesan and Basil or Lemon Basil Orzotto? both come together quickly and you could add some shrimp or grilled chicken if you want more protein.
