Help me with my groveling meal on Thurs.

So.. since I missed bff's dd's bday party on Sat since I had to work and couldn't get out of it and then on top of that I completely flaked on bffs sister's bridal shower on Sunday (no excuse, I'm just a friggin spaceshot lately) I'm having the three of them over to celebrate both things.

 

I plan on making my spinach and artichoke dip that they LOVE and also a berry trifle for dessert that they also LOVE (and normally make both for all potluck occasions with the family).  What do you think I can do for dinner?  I'm drawing a blank.. I want it to be casual but special.  I have to work till 2 so it's gotta be something fairly easy.

 

I was thinking chicken cesar salad.. but is that too blah?

    Sour Cream Pork chops are always a hit here and it's a crockpot meal.  Score.

  • I don't know but I just wanted to say that your spinach and artichoke dip is like crack.
  • I think chicken caesar salad is kinda boring for a dinner with friends. You could do a caesar salad with dinner, though. Its more of a lunch entree on its own, IMO.  

    Why not make PW chicken pot pie? you can prep it the night before, and then throw it in the oven when u get home.  I use store bought crust and is a definite favorite in our house.  I can't remember if you tried the Italian Drip Beef or not, but something tells me the name grosses you out...anyway - its good and you can make that in the crock pot, served on nice crusty rolls, with the caesar salad and maybe some sort of oven roasted potato for a side.

     

  • Orzo with Parmesan and Basil or  Lemon Basil Orzotto? both come together quickly and you could add some shrimp or grilled chicken if you want more protein.

    That last recipe looks amazeballs minus walnuts.  Tell me more about your variations :) 

    also.. I can make anything healthier.  Even my cheesy gooey dip of crack :)
