Chicken Salad!

Anyone care to share their favorite Chicken Salad recipe?

  • I don't really have it down to measurements, but I usually chop up a couple of grilled chicken breasts, throw in some diced celery and onion, halved red grapes and toasted walnuts (or almonds, pine nuts, whatever you have on hand), mix with plain yogurt and season liberally with curry powder, salt and pepper to taste. It's awesome if you let it sit for a while before serving- I'm a huge skank for curry!

    I usually do something like this.  Sometimes I use Miracle Whip, sometimes I use greek yogurt.  Whatever.  I will say, though, that I hate huge chicken chunks so mine always ends up having a texture more like ham salad, like a thick paste.  Which sounds disgusting now that I type it.

    I usually do something like this.  Sometimes I use Miracle Whip, sometimes I use greek yogurt.  Whatever.  I will say, though, that I hate huge chicken chunks so mine always ends up having a texture more like ham salad, like a thick paste.  Which sounds disgusting now that I type it.

    I hate the big chunks of chicken too. I usually cook up some chicken breasts, cut them into chunks and put the chunks through the food processor before making salad out of it. I'm also a minimalist when it comes to chicken salad. I use chicken mayo and/or miracle whip depending on my mood, and salt and pepper. Pretty boring, but also delicious.
