Brunch menu- cheap and easy
I'm doing a 1st birthday party brunch for my little guy at my MILs house (we live out of state and all our friends/family live near MIL). I'd like to do a brunch but don't want her to have to pick out a menu and do the prep. I told her that I'd do all the planning and work for it, she'd just have to have a clean house- which is normal for her so no big deal.
Anyway, I'm at a loss- I want it to be nice and delicious, but relatively inexpensive and EASY! I'll be making the cake from scratch (we have food allergies and I need to be sure it's safe for those that wll be there). We're getting into town the afternoon/evening before the party.
HELP! Recipes get extra points

I'm afraid to suggest recipes because I don't know what allergies your family has.
Hash brown quiche
Lightened hash brown casserole (obviously not if you're making that quiche lol)
Cut fruit
Baked asparagus
Spring salad - I like spinach, dried cranberries, honeyed almond slices, blue cheese crumbles, and raspberry walnut vinaigrette
Martha White lemon poppy seed muffins (yep, I'm a cheap cheat lol)
Bacon or sausage
Chicken or tuna salad (with optional croissants)

how many people? I make a blueberry french toast that is super easy and people love.
13x9 greased pan. 1 loaf french bread cut into 1" cubes. put half in bottom of pan. top with 1/2 pint blueberries and 8oz cubed cream cheese - top with remaining bread. Mix 1 dozen eggs, 2 cups milk, 1/4 c. syrup and pour over top. cover and put in fridge overnight. bake at 350 for 30 min covered. take foil off and bake 30 more min until browned.
you can buy quiches at CostCo and heat that morning.
bacon - bake it in the oven so you don't have to stand over a pan.
fruit platter, muffins and mini-scones from the grocery store.
easy - bake a ham or pork tenderloin - these can be done from day before and stays moist, unlike a roast or chicken.
garlic bread is a favorite for most - pre-packaged, sliced and heat
smoked salmon on some nice crackers is also a nice touch.
A yogurt bar with fruit, granola, and nuts (or without nuts and/or granola if that's where your allergies are).
Muffins (you can get those mixes from the baking isle).
And there's always the normal stuff, French Toast, Waffles, Eggs, Quiche, Pancakes.
