I couldn't find an appetizer that struck my fancy so you get two main dishes instead :-) I went with the theme of quick and easy weeknight food, since that is my life right now! These are easy recipes to turn to when you just don't have time to play chef that night.

Chicken Oreganato

 

7 chicken thighs
2 teaspoons dried oregano
salt and pepper to taste
1/4 cup olive oil
1/2 lemon, juiced

Preheat oven to 450 degrees F (230 degrees C).

Wash chicken well and pat dry. Mix oregano with salt and pepper to taste. Rub well over all of the chicken pieces. Put chicken in a greased 9x13 inch baking dish.

Whisk the oil with the lemon juice and drizzle half over the chicken. Bake in preheated oven for 15 minutes. Turn the chicken pieces and drizzle with the remaining oil/lemon mixture. Bake for another 15 to 20 minutes. Serve warm, cold or at room temperature!

 

Lemon Basil Chicken

4 boneless chicken breast halves, without skin
Marinade:
3 tablespoons fresh chopped basil, or 1 tablespoon dried basil leaves
Juice of 2 lemons, or about 1/3 cup
1 tablespoon olive oil or canola oil
4 cloves garlic, chopped
Fresh basil or fresh parsley for garnish

Put chicken breasts between sheets of plastic wrap; gently pound to even thickness for even and quick cooking.

Combine marinade ingredients in a plastic food storage bag; add chicken and refrigerate for 1 to 2 hours. Heat an oiled grill pan, grill rack, or broiler pan. Arrange chicken on hot pan or rack and grill or broil for about 10 to 12 minutes, turning often. Serve with fresh basil leaves or parsley, if desired.

 

Easy Weeknight Rice
2 Cups of Rice (I use brown but white would work)
2 Cups of water
1 14oz can of Diced Tomatoes (including liquid) (could use diced tomatoes with green chiles if you wanted it spicier)

Put them all in a pot or your rice cooker, and away you go. Tomatoes add a nice flavor to the rice. If cooking in a pot, cook according to your rice?s directions.


Cyndi Green Beans

1-2lbs fresh green beans, ends snapped.
Olive oil (for pan, 2-3 tbsp)
Minced Garlic (about 1 tbsp per pound of beans)
Reduced sodium soy sauce, about ? - ? cup total
Sesame seeds

Heat your oil and garlic in a large skillet. Add green beans and saut? for about 5 minutes. Slowly add soy sauce, about 1/8 cup at a time, covering skillet to let the beans basically steam in the soy sauce. Keep adding soy sauce to increase moisture as they cook. Add sesa


Dressed Up Package Brownies
Your favorite brownie mix
? -1 cup mini chocolate morsels
Powdered sugar

Mix brownie according to box directions.

Add mini morsels into the batter.

Bake according to box directions (remember your toothpick may be chocolate-y but it?s most likely from the morsels, not that the brownie is not cooked).

Sprinkle lightly with powdered sugar.
