Kid's Dinner

I'm having a tough time with dinners. If Jeff is gone on an appt I usually just eat cereal, or something similar. I'm running low on super quick & healthy dinner ideas for G. 

What are somethings I can make and freeze in dinner size portions or things I can make and will keep good for 2-3 days in the fridge.

  • I feel your pain, my hubby is gone 3-4 nights a week.  Some of my faves (& Cole's too):

    - Heatwave Carnitas http://www.thekitchn.com/thekitchn/slowcooking-in-the-summer-heat-121376 (makes a ton and I freeze in serving size portions)  makes awesome puled pork sandwiches or tacos.

    -Quiche

    -Soups (I currently have minestrone and chili frozen)

    -I always have wheat tortillas and hummus on hand for something quick for Cole to eat.  I just cut into bite size pieces. 

    - Spanish Veggie Burger Bites with Flaxseed, Falafel Bites, Veggie Quinoa.  Makes a lot so I also have portions of this frozen when I am in a pinch for a good meal for Cole (all from this cookbook:Organically Raised: Conscious Cooking for Babies and Toddlers)
