These are all recipes we've tried recently and have loved! Bonus, they're all yummy and green (ish - they do all something green in them)
Salad with Blueberries and Blue Cheese - This is so good that I can't stop making it. I've tried it w/ a creamy poppy seed dressing and a balsamic vinaigrette too. I've also mixed Spinach and Arugula. I love it.
Thai Chicken and Noodles - So good! I consider it a salad even though it's not your typical green affair. It's easy and the girls love it.
Baked Kale Chips - I've made these so many times, and so many different ways. With all sorts of seasoned salts, spices, lemon. You name it. They're awesome.
Cilantro Lime Rice - If you need a side for a Mexican dish, make this rice. It's ridiculously good.
Homemade Pistachio Pudding - Ok, so this I haven't made yet. But it is green! And it looks yummy
