can I get some swiss chard ideas from y'all?
Maybe I should post on WC too?
I'm beginning to dread seeing SC in my CSA box. And this week I got a shitton of it. As it is I have three recipes for it but they're basically all different ways of sauteeing it.
Does anyone prepare it *in* something or differently than sauteeing it? A big problem is DH doesn't eat tomatoes and it seems like a lot of SC recipes call for tomatoes. He will eat tomato products that don't resemble actual tomatoes though.
thanks for any help. Last week I didn't get around to using it and I know that's b/c subconsciously I didn't want to eat it.
Re: can I get some swiss chard ideas from y'all?
Pasta with Italian chicken sausage, peppers and escarole - I made this tonight. I plan on making it this summer with swiss chard from our garden instead of escarole.
Chicken noodle soup
Lemony swiss chard with pine nuts
Swiss chard and sweet pea manicotti
I like to throw it in lasagna, pasta salad, regular salads..
We have wilted it and put it on pizza with sausage. Basically a twist on the same ol' thing.
Sorry, I'm not much help...our standard is sauteed (with bacon fat) with sausage and potatoes or something.
We got soooo many greens this winter. I don't actually mind chard too much (last month we ate it with spicy sausage and spaetzle), but I am so tired of kale now. It just seems so much more bitter than all of the other greens.

If you find yourself with too much, I've found that you can give it a quick stir fry and vacuum seal it and it will keep in the freezer quite well to add to soups in the winter.
See? And I'm totally digging on the kale now. I wish I had as much kale as I have SC.
Even though I messed it up and didn't sautee it before I put it in w/ the rest of the ingredients, it still tasted yummy! Thank you.
Do you like Italian Wedding soup? Traditionally it uses escarole, but I use chard in it a lot. I don't have a recipe...just make a bunch of mini meatballs, brown, throw in a pot with chicken stock, onion, garlic, greens, and pasta shape of some sort.
This preparation is good:

This dish would work with chard

You can also substitute it for spinach in anything - just needs to be cooked longer. Saute it and add to quiche, spanikopita, etc.
so glad you liked it!
You can also use it for a green smoothie. This is the one I use but I'm sure there are a ton out there:
1 c. chard
1 c. spinach (sometimes I don't have spinach so I use 2 c. chard)
1 apple
Juice of 1 lemon
1 c. strawberries (I use frozen when they're not in season)
1 banana
1. c. water
Put all the ingredients in a blender and blend until smooth.
Tired after a long morning of hiking and swimming.
Epicurious and eatingwell both have some good recipes.

I am SO bookmarking this thread. I love chard! One more to add:
Eggs in a Nest http://www.animalvegetablemiracle.com/EGGS%20IN%20A%20NEST.pdf *This is from the wonderul book "Animal, Vegetable, Miracle." It's a great way to enjoy fresh chard. We don't like runny eggs, so we cover the pot for like 10-12 minutes rather than 3-5 like the recipe says.
