When you make the burrito casserole, what do you have as your sides, if any?
I want to make it this week, but am drawing a blank on what to have with it that would be good.

I also know I'm not Kearstin, but I am nosy...
I actually just got back from the grocery store to pick up the ingredients for this. I was thinking of Spanish rice, but I really don't like it. So we are going to have zucchini with it. Not that it "goes" but I like it, and it's healthy.
I like Tisha's idea of using tortilla chips, too.
Oh, and I wish I would've gotten some bell peppers to add to the meat and onion. I thought about it as I was pulling into my driveway.

Stupid work taking over my nesting time lol.
I usually make it when I make burritos or tacos or anything mexican (they typically serve little sides of it at mexican restaurants). I also make it when I make chili or pulled bbq chicken sandwiches and use as it as 'bbq joint' type side. I also don't put in the sour cream...I feel like it makes it too soft, I like it a little bit more stiff but it's delicious either way.
This whole post makes me lol.
If we are feeling healthy, I make sweet white corn with green and red peppers chopped up in it. If we are eating like we normally do, I make guac (4 avocados, 1 beefstake tomato, 1/2 sweet onion, 1 cup cilantro, 1 lime juiced, then I add a little salt) and we dip tortilla chips in that.... and end up dipping the chips in the casserole before the end of the night!
I'm still stalking this post...
I got lazy and did not cook the zucchini that I originally was planning to serve with this. Instead, I bought made-in-store guacamole and we ate that with the casserole (but no chips, because naturally I wouldn't have planned for that!).
Anyway, it was awesome, and I very much look forward to the leftovers I am going to eat for lunch!

Joining in....two things:
1. When I make the above corn casserole, I also add and egg, salt and pepper, some garlic powder and shredded cheddar (because let's face it, everything is better with cheese.)
2. When I make anything Mexican I usually make guac and spanish rice (from scratch not out of a bag or box). I use brown rice, black beans, whole kernal corn, chicken broth, green pepper, onion, salsa. I can't seem to find the recipe right now...GRRR!
Never thought of making my own! If you find it, please share! Mmmm I want it now lol
