Mexican Grad Party

My littlest sister is graduating from high school next month. She wants Mexican food at her grad party because it'll be different from the traditional finger food open houses that everyone else does. My thoughts are this:

Chips and Various Salsas

Layered Mexican Dip

Build your own Taco/Taco Salad Bar with various toppings to include beef, chicken, beans, lettuce, tomatoes, cheese sauce, cheddar cheese, jalapeno peppers, sour cream, guacamole, rice, hard and soft shells etc.

Sweet Cornbread

Dessert Bar

What would you add, change or delete? Thanks!!!

ETA: Party will begin at 4 pm and is a mainly adults.

  • Sounds like an awesome party!  I'd rather attend this kind of party then the typical fried chicken and beefs or hotdogs and burgers.

     I would add another side, maybe some sort of fruit salad with tropical fruits?

  • I would add corn and beans (pinto and/or black) to the bar. 

    And make sure there's enough Guac for the bar AND for chips, near the salsa.

    Maybe some virgin margaritas for your sister and her friends!

  • I think it sounds fun too.  I didn't see it on the list, but shredded lettuce.

    Fruit salsa and cinnamon chips would be something fun to add if you want.

    All the other suggestions are good.  I don't think the cornbread goes though, unless it's something she really wants.   If you can use an oven, maybe do some quesadillas or empanadas you can get frozen from Costco/Sams for extra finger foods.   A lot of people like to graze and mingle at parties like this.
