My lettuce is a pretty good size now... how do I harvest it? Do I pull up the entire head or can I just pick a few leaves?

Just pick a few leaves. It grows from the inside, so start from the outside discarding any that look nast. Or if you're making a big salad you can trim all but the last two inches and it will grow back.
