Easy meals for large groups
We go to the lake with DH's family every other year. There will be 9 adults and 11 children this year. Each of the families take turns cooking dinner and I am looking for something simple to make on our night. One family is already doing pasta and another is going to BBQ chicken.
(I am dairy and soy free right now due to DS's milk protein & soy sensitivity. I am hoping that he will be over it by this summer, but he may not be. I don't have a problem cooking something for everyone else and making a sandwich for myself though.)

Re: Easy meals for large groups
How fancy or casual to you want to go? Is there a grill?
For summer I like to just marinate and grill some sort of meat and veggies.
Tacos or pulled pork are always really easy for a crowd. I have a fantastic recipe for tilapia and sundried tomato couscous all in one casserole dish add a salad for a great meal.
A couple of roast chickens with sweet potatoes and/or baked potatoes, salad, and cauliflower? Or even a turkey with summery sides. If you do it in a roasting bag it takes no time and self bastes.

TIA~

Here you go! Super easy and TASTY. This is one that makes a regular appearance on our table. The ingredients are simple and cheap.

That pork recipe would also be really good for a crowd, but you might need a bigger crockpot.
OP- If you have a crockpot I also have a great recipe with sausage and a bunch of types of beans.
Mexican. You can make up taco meat easy for a group.
Marinated chicken or pork. I marinate it ahead of time and just grill it.
I second pulled pork sandwiches - take the crock pot with you and serve it on rolls with a side of baked beans and grilled corn!
Tacos and pulled pork both sound like great ideas. Thank you for the suggestions!
Sounds pretty casual, so here are some suggestions for you...
This one is a good way to stretch meat. Very cost effective and tasty: Steak Bites
This can be spicy, depending on which enchilada sauce, but it's easy and cheap to make a ton. Serve with black beans and some guac. Chicken Enchilada Casserole
Here's a fun, fairly light meal that you can do buffet style and all the kids can make their own. Taco salad
If you go with a Tex Mex suggestion, you could set out some of this dip & some salsa with some chips as an appetizer.
We eat this as a meal, as pictured, but you could also use it as a great side dish or a chunky dip for your chips.
And homemade sloppy joes are always kid friendly. :-)
