Does this menu and timing make sense? brunch

I'm hosting a 1st birthday brunch at my MILs house. It's a 7 hour drive from where I live (We just moved away and wanted to go home to celebrate the birthday). Here's my menu:

french toast kabobs (I'll bake bread probably thursday in my bread machine for this and make them up Saturday morning)
egg casserole (MIL making)
fruit salad (MIL making)
mini muffins (Mom making)
bacon & cheddar scones (I'd like to make ahead and bring with me- can I make them Mon/Tues, and freeze them baked and still be ok?)
sausage & bacon (Sat morning)
bagels (picking up Sat morning)
lunch meats and cheeses (MIL)
pasta salad (MIL)

Cupcakes and Cakes
Ice cream
Cookies as a take home treat

How does that sound?  It's a party for 18-21 people.

  • The menu sounds lovely, but you would better off freezing the scones unbaked on a cookie sheet and using the 7 hour drive to defrost them, then bake them Saturday morning. 
  • It's kind of bread heavy- muffins, scones, french toast, bagels and something to put the lunchmeat on?  Persoannly I would drop the scones and mini muffins.  I would add croissants and some jams.  The bagels and crossaint can do double duty as a breakfast bread or as sandwich bread.

    I'd probably also add a potato of some sort- roasted potatoes, potato salad, or cheesy potato casserole.  I'm a potato freak though.

    Finally, I'd like to know more about these french toast kabobs.  They sound awesome.

  • well, I guess I'll skip the scones I guess and do the potatoes. Potatoes sound good to me.  Guess I'll make the scones for me here :)  Maybe I'll bake a few on Friday and bring them in the car for snacks! Yum.
