I bought some mahi mahi to grill tonight
what else should I have/make w/ it?
I'm dying from creamed spinach (is that gross?) does that go with it??

Mahi mahi is something I've only had once or twice, but I always associate really light flavors and side dishes with fish. How are you going to season it?
ETA: In regards to the spinach, I'd do sauteed in a heartbeat, but I'm not sure I'd do creamed. If it's what you really want, though, then that's all that matters.
When we do salmon (my fish-of-choice), I tend to just roast/grill/steam some fresh veggies and make some garlic cous cous. I've also oven-roasted potatoes and onions and just made those as the side. I'm not very inspired when it comes to fish, apparently.
I have some fresh cauliflower - we'll roast that w/ it - that sounds good.
And garlic cous cous - yumm
I like the sauteed spinach, but I only have one bag of fresh spinach and I need to make pesto with it before I forget.
