i have the worst insomnia lately but last night all i could think about while trying to fall asleep was cream of asparagus soup. found an easy tasty recipe this morning and made it t & thought i would share.
ingrediants:
8oz of asparagus (wash and chop into inch or inch and half pieces)
2 cups of milk (i used raw organic)
2 tablespoons of unsalted butter
2 t of flour
salt/pepper
optional: onions (i used a slice of red onion all chopped up)
directions:
1. create white base: melt butter and whisk in flour. cover with milk add some salt and pepper and stir until it thickens up and bubbles. remove from heat place aside
2. in a separate sauce pan bring water to a boil. throw in asparagus for 5 minutes. drain asparagus and keep one cup of boiling water.
3. in a blender toss in half to 1/3 of asparagus with the cup of boiling water and blend.
4. combine the asparagus juice, asparagus & white base together and bring to a simmer. add onions, salt & pepper to taste.
feeds: 2 large bowls or 4 small ones
