What prompted the veggie experiment? I have a bunch of awesome veggie recipes (that are pretty easy - I am not a fan of complicated cooking) if you're interested.
Our new favorite meal is super easy and yummy - roast some eggplant, squash and red bell peppers at 450 for about 30 minutes. Put in a pita with whatever lettuce/green you've got (we've used baby spinach and romaine), Kraft Greek Vinaigrette dressing and some feta cheese. SO good. Some fresh tomatoes would probably be good in there too.

Umm, not to butt in, but this sounds awesome.
I think I could be a vegetarian or at least pescetarian relatively easily, but H couldn't, and I'm too lazy to deal with that.
I really am just doing it to shake things up. I've been eating waaaay too much crap lately, gained a few pounds, and generally feel like arse. Knowing myself, I know I really have to make a big change to make any change, you know? In addition to the veg stuff, I'm staying away from processed foods, white flour, etc.
I doubt I will stick totally veg forever, but I'm giving it at least a week or two. I imagine even after I'm finished, I'll do days of veg, and try to only eat meat once a day the days I eat any.
I will take any and all recipes. I made a pretty yummy beans and rice recipe Tuesday and have been eating that the past few days, along with veggie burgers, tabouli, greek yogurt, fruits and veggies, etc. I would love something that felt more like a real meal, though.
I need a rare steak with blue cheese on top every now and again, though. Damn, I shouldn't have typed that. Now I want one.
Yeah, I don't know if I could go completely veggie, either. I usually only eat meat when we go to the ILs for dinner, maybe occasionally when I go out to eat. I can do without the rare steak, but I don't know that I can live without some bacon. =P

This recipe is one I posted here a while back. We recently had a bunch of people over and served these (minus the curry, ginger and cilantro) and got many compliments:

This is another favorite. I also add sliced carrots, and we eat it on flour tortillas with tomatoes, cheese, sour cream, sometimes red bell pepper. It's better to leave the cilantro to garnish the tacos individually, I think.

The cutlets from this site are a bit more complicated than the other stuff, but pretty darn tasty. (Don't worry about the nutritional yeast. It's expensive, and I've left it out before and it worked fine.) The recipe makes 8, but I usually freeze half of them to have another time.
