I got collard greens in my box this week!  I had to google just to figure out what they were.

You guys seem to have better resources for good recipes than I can find on my own so if you have any to share I would appreciate it!

Also- suggestions for beet greens are welcome.

You can use any "greens" recipe pretty much interchangeably. Collard greens will just take longer to cook.

Beer braised collard greens

Sauteed collard greens with bacon

Smothered beans

Roasted beet frittata with beet greens, shallots and goat cheese

 

Beet greens can also be thrown in a green monster smoothie.

I made a collard frittata that was SO good. It's in my blog, along with the frittata I made with beet greens.

Indian Saag Paneer http://allrecipes.com//Recipe/indian-saag/Detail.aspx *Add paneer (a firm, Indian cheese) to this, you can get it from Whole Foods (it's next to the packaged cheese) or better quality paneer from an Indian market.  Cut up one block of paneer into cubes and saute in olive oil until browned.  You can use 1 pound of any "bitter" green (mustard greens, kale, collards, turnip greens) and 1 pound of any "mild" greens (spinach, chard, bok choy, beet greens.)  We think it's best with kale and beet greens.
