Bathroom cleaner recommendations
I'm trying to switch over to more environmentally friendly cleaning products.
Our bathroom has no windows and no source of ventilation, so I'm looking for something I can use to clean the bathroom that is also easy on the lungs and environment.
I need something that will help eliminate soap scum and get rid of and prevent mildew.
Can you please recommend what you use to clean your bathrooms?

Yes, and some castille soap, essential oils.
I highly recommend installing a fan and vent if you can... that's the best way to avoid bathroom "flora." I think it was ~$250 when we had it done (it was part of a bigger project, but i think this is pretty close; includes materials and labor for electrical and venting).
We use same supplies as above. I haven't had to get rid of mildew/mold, but maybe try peroxide/water solution (wear gloves) and then maintain with vinegar, baking soda, dr. bronners and tea tree/orange/etc. essential oils.

Unfortunately, I'm in a rental, so I can't install one. It boggles my mind as to why they didn't install one in the first place - it's a newer building.

Some states require bathrooms to either have a fan or a window, so I would look into that. Your landlord may be obligated to install one for you.
I use the following recipe for my "all purpose cleaner" which I use for the toilet, sink and bathtub.
4 Tbsp. Borax, 1 Tbsp. castille soap, 1 Tbsp. baking soda, 4 cups water
When I moved into my apartment, my bathroom was nasty and it worked great!!
