Eating anything good tonight?

My BFF and I are going to a Mexican restaurant for dinner and leaving the husbands home for once.  Mexican is my favorite type of food and she's 31 weeks pregnant so she eats lots of everything right now....pretty excited to pig out with her tonight on tons of chips and salsa lol.

    I'm making strip steaks tonight, maybe with some rice and veggies. Nothing too crazy. Last night I made some shrimp lo-mein though, and that was delicious.

  • I'm making chicken enchilada's.  Mine are very basic, but I've grown to love than them more than most restaurants: chicken breast cubed w/enchilada/taco seasoning, black  beans, little cheese in tortilla, then topped with more cheese, green pepper, salsa and medium enchilada sauce.

    And DH's are just chicken and cheese in a tortilla. Lol. Sad.

    And we're having Mexican rice, but yea, it's the kind of out a bag.

    I usually do gaucamole also, but avacado's were full-price and at $1.99 each I passed.  DH made fun of me that I wouldn't spend $2 on one, but usually I buy them only when on sale for $0.99!

    I don't blame you one bit.  I have a really hard time getting myself to buy any kind of produce when it isn't on sale.  The last time I made salsa I was in a rush and didn't have time to check out the sales, and ended up spending over $2 for one large red onion...ridiculous.

    Side story: We've been into Greek yogurt and I usually buy whatever brand is on sale.  This week it was Fage.  It's usually $1.99 each and the sign by them said "4/$5" (so $1.25 each).  I go check out and notice that they're ringing up as $1.99ea so I call it out.  It takes 5 minutes, but they check the signage and agree and give me one free.  I was buying 6, so paying full-price I would have spent $4.95 extra with tax!  By calling them out and with the free only; I paid $1.04ea, yippee!

    Either indian food with naan (the food is out of a box, and the naan is premade from wegmans) or Gnocci with marinara sauce (note, the jarred sauce I bought was only 99c and its AMAZING!)

     Very nice! I am not a huge fan of yogurt but have been interested in trying greek yogurt. any recs on what brands? They seem a lil pricy so I have been going back and forth on trying it.

  • Sad Chris' best friend that we were going to go to dinner with has a stomach bug, so we aren't going anymore.  Man.  I was really looking forward to eating the specific thing I was going to order.

    I told Chris he's in charge of dinner.  So it will probably be Subway...again...

  • We are having leftover chicken enchilada's. I have started making mine with the Philly cooking creme, OMG that stuff is AMAZING!! 

    I kinda want Chinese for dinner but we are trying to save money and we need to eat the leftovers in our fridge.

    We get whatever brand the grocery store has - usually it's this MTR brand (http://www.mtrfoods.com/readytoeat/index.htm) and we usually just grab whatever ones sound good since I can never remember the names of the ones that are good, haha. They're super easy though, you just microwave for 1 1/2 mins. Our grocery store carries AMAZING homemade naan that we heat up in the oven to eat with it. And we'll usually make some brown rice as well.

    fun fact: DH and my first date was to an Indian restaurant, he had never had indian before. After our first date he went to the grocery store looking for these indian dishes bc I had told him about them. He pretended to not know where to find them (he was standing in front of them the whole time) because he wanted to have an excuse to call me. :)
