I live in Europe right now, but will be moving back to the US in a couple of weeks. My husband bought an iPhone 4 here (on Vodaphone). He will give it to me after we get back.
I am assuming I will need to unlock it somehow to use in the US? I will probably use AT&T since that's what my current US cell phone is (and I want to keep the number because it has a "good" area code, LOL).
Anyway, I have the following (likely stupidly obvious) questions: Can I just follow unlocking directions online and swap out the sim cards? If so, do I then just go get a data plan? If not, what do I need to do?
If possible, please talk to me like you would if trying to coach your grandmother through the process. . . . .:)

Has your husband finished out his contract with Vodaphone? If so, just go with him to a Vodaphone shop and tell them that he's finished his contract and wants to give you the phone, so could they unlock it?
That's what we did with EH's old iPhone when he upgraded, and all it took was a little fiddling on the computer by the guys at the Norwegian cell phone boutique. That was it. Now I can use my iPhone on any GSM network by swapping the SIM card (I actually use it when I'm in the US, using a prepaid SIM).
In the US AT&T flatly refuses to unlock an iPhone, even if the contract is fulfilled. I think the European legislation keeps the carriers here from doing that, but it's possible that Vodaphone won't help you out. And if his contract isn't over, they probably won't. In that case, you'll be stuck jail-breaking it, which I haven't done and have no advice about.
