meal for family w/newborn twins and 2 yr old

One of the managers at my work has twins that are about 6 weeks old and then they have a 2.5 year old. We all signed up to bring them meals.. my turn is on Tuesday. What could I make that adults and a 2.5 yr old would enjoy that does not involve pasta (I'm sure most people have brought them pasta)?  My one idea was chicken/black bean quesedillas since I know my kids would eat that..

  • Since Sophia is such a great eater I always struggle with this!  The last meal I took with my mom's group was tacos with all the fixings, though, and the family said they really enjoyed it.  They have a 2 year old as well.

  • You could do the makings for lunch meat sandwiches- when I had Brody a coworker brought over sliced ham and turkey, buns, chips and fruit salad and it was a refreshing change from pasta and take out! :)

  • Chicken enchiladas, rice, and cornbread muffins.

  • Tatortot casserole, or pizza bread! Those are my favorites. :)
  • Crock Pot salsa chicken, with Mexican style rice?
  • I try to do a baked dish that they can bake at their leisure. I did a stuffed chicken recipe the other day, and the week before I brought a beef empanada/taco casserole type thing. Then some sides/fruit/dessert/etc. It seemed to go over well.
