Hosting a party after baptism back at our house and it happens to fall on Fathers Day so I wanted to have some different fun menu ideas to add to what we normally serve. Was thinking of grilling chicken as one menu item - any good marinades out there? Also thinking of having steamers, a spinach-walnut-strawberry salad, oriental pasta salad, and possibly BBQ pulled pork sandwiches. What else can I add? Was going to do chicken tenders for kids but if I am grilling chicken - I thought that should be sufficient. Need to tie this menu together... any suggestions would be greatly appreciated. OH and any fun drinks to serve? We will have fresh lemonaide, and the usuals soda, water, juice boxes, and I was going to have a cooler of beer and some white wine -but if anyone has a fun drink recipe alcoholic OR non-alcoholic that would be great too!
Re: Summertime Menu ideas for Baptism
What are steamers? I'd add one other side and a veg, but thst msy be covered in the steamers.
Just a logistical point. I'd try to do things that are ready when you get back. If you want to cook when you get home then plan to have quite a few apps out. At least for our services people travel, then sit through an hour plus service. Then home, pictures, etc. I'd consider doing pulled pork and pulled chicken for this reason.
Good point on logistics! I can have some apps ready to serve right when we get back from the church and the pulled pork, salad, and oriental pasta salad will be done day before. But we do need to grill the chicken. Steamers are Steamed Clams - I guess that is a New England thing... you can cook them all different ways - traditional way would be in water and serve with warm butter to dip, but we usually do it with beer or cooked in stewed tomatoes and wine to fancy them up. They only take a short time to cook and open but this is something my sister said she would do.
Any good veggie sides or other side ideas? Should I do corn or a potatoe salad? Just not a fan of mayo based salads on hot days - even though that is a picnic staple.
So the menu is: clams, grilled chicken, pulled pork, salad, and pasta salad? You have more mains then sides. I'd probably dump the pork, add a fruit salad, and another starchy side- baked beans, potato salad, mac and cheese. I'd have a veggie plate and cheese for the apps that can double for sides at the meal.
If you have some "adventurous" eaters this is a REALLY good non mayo potato salad.

Just wait until the last minute to add the peanuts.
This chicken is great. Really, really good.
This corn salad is a huge crowd pleaser.
Tortellini salad has great flavor, but you have oriental pasta already.
This cracker spread would be good to have out while you're getting things ready.
For dessert, these are on my to-bake list - seem fun for kids and adults.

Thinking of doing cosmetic updates to a dated home? These were our costs.
For drinks- why don't you try a sangria? You can make it the day before and it's so easy!!
White Sangria
This is similar to one I've used in the past. For red wine... I think I just used the bottle of wine, one cup of OJ, one cup of sugar, an apple and an orange cut up.
It's easy and refreshing!!
