today...recipes.

So this week, I am continuing my mission of laying in provisions for when Molly comes.  I did a stint at the Stocked Fridge last month and that was about 10 meals worth. Yesterday, I made a huge sauce from scratch and that is about 6 meals worth, plus one container that I put aside to make some lasagna and that will be an additional two or three meals, I think.

Today, I'm making a big thing of Jambalaya. I don't eat it, but DH loves it, so it will be great for lunches for him. I'm also making some no bake cookies for going over to JoyLoveRings' house tomorrow night. So I wanted to share the recipes. :)

My Dartmouth St. Jambalaya (pimped from Emeril several years back when I was in college):

12 medium shrimp, peeled, deveined and chopped
4 oz chicken, diced
1 tbsp Creole Seasoning (recipe follows)
2 tbsp olive oil
? c chopped onion
? c chopped green pepper
? c chopped celery
2 tbsp chopped garlic
? c chopped tomatoes
3 bay leaves
1 tsp worcestershire sauce
1 tsp hot sauce
? c rice
3 c chicken stock
5 oz andouille sausage, sliced (not all stores carry this. Chorizo is a suitable substitute, usually found near the hot dogs and kielbasa)
salt and pepper to taste


Creole Seasoning

2.5 tsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme

Combine shrimp, chicken and creole seasoning in a bowl and work in seasoning well.

Heat oil in a large saucepan over high heat with onion, pepper and celery for three minutes. Add garlic, tomatoes, bay leaves, worcestershire and hot sauces.

Stir in rice and slowly add broth. Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes. When rice is just tender, add shrimp and chicken mixture and the sausage. Cook until meat is done, about 10 minutes more. Season to taste with salt, pepper and creole seasoning.

No-Bake Chocolate and Peanut Butter Oatmeal Bars (courtesy Martha Stewart Living Mag, August 2008)

  • Vegetable oil cooking spray
  • 9 ounces chocolate wafers (about 40 wafers), finely ground (2 cups)
  • 1 1/2 cups old-fashioned oats
  • 1 1/4 cups confectioners' sugar
  • 1/4 teaspoon coarse salt
  • 5 ounces (1 stick plus 2 tablespoons) unsalted butter, cut into small pieces
  • 1 cup chunky peanut butter
  • 3/4 cup plus 3 tablespoons smooth peanut butter
  • 10 ounces semisweet chocolate, melted
  • 1 1/2 ounces milk chocolate, melted

Directions

  1. Coat a 9-by-13-inch baking dish with cooking spray. Line with parchment, leaving a 2-inch overhang on the 2 long sides.
  2. Combine wafers, oats, sugar, and salt in a large bowl. Melt butter in a medium saucepan over medium heat, then add chunky peanut butter and 3/4 cup smooth peanut butter, whisking until well combined. Add peanut butter mixture to wafer mixture, stirring until combined. Transfer to baking dish, and use the bottom of a measuring cup or an offset spatula to firmly press mixture into an even layer. Refrigerate for 30 minutes.
  3. Pour melted semisweet chocolate over chilled mixture and, using an offset spatula, spread into a thin layer that covers the entire surface. Refrigerate until hardened, at least 15 minutes.
  4. Heat remaining 3 tablespoons smooth peanut butter in a small saucepan until runny. Drizzle peanut butter over chilled chocolate. Drizzle melted milk chocolate over peanut butter. Refrigerate until hardened, about 15 minutes.
  5. Use parchment to lift out chilled block of bars. Run a sharp knife under hot water, dry well, and cut into 24 squares, wiping knife between cuts. Let bars stand at room temperature for 10 minutes before serving. (Sliced bars can be refrigerated for up to 1 week or frozen for up to 1 month.)

 

 

Re: today...recipes.

  • I've never made Jambalaya.  I need to come up with some good make ahead stuff for Mr. Feef now that hockey season is here.  I have season tickets to the Bruins so sometimes Mr. Feef is on his own for dinner 1-3 times a week.  If the fridge is stocked with anything he can do quick in the micro or on the stovetop in one pan - he'll eat it and not order out and possibly eat something that is deraling my helping him lose weight and lower his BP.

    Anyone else have something to share that fits this, it's a pretty good excercise with winter coming!
