Your favorite store-bought (or DIY) frozen meals?
I'd really like a better alternative than picking up cheap Chinese food (like I did today) when we don't have time to pack lunch in the morning.
Any recommendations (other than not giving in to the laziness bug and skipping the lunch prep in the evening
)?
No diet restrictions, and we are leaning towards "clean eating" and as organic as possible, but aren't strict about either right now. And as a frame of reference, I tried a couple different Lean Cuisines a few years ago and thought they were disgusting...I hope all frozen meals don't taste like that!
Re: Your favorite store-bought (or DIY) frozen meals?
I recently took a look at the frozen aisle and found some that I like. I have been buying some of the Healthy Choice (I really like the Sesame Glazed Chicken) and then they have Lean Cuisines in a bag. My husband really likes them.
Just the other day I saw that our grocery store is now carrying Kashi frozen meals. I picked up the Black Bean enchilada one, but haven't had a chance to try it yet.
I assume you have access to a microwave and would prefer a hot lunch. Also, I'm a vegetarian.
When I was working (aka "the good old days before the Recession) I would usually bring dinner leftovers (pasta, soup, enchiladas, rice and beans, etc.). I would also make something large and portion it out for freezing (chili, lasagne, etc.). I would also make extra grains, like quinoa, and turn that into a cold salad with lots of veggies.
I have no recommendations of prepackaged foods, but I've heard Amy's isn't too nasty.
Whenever I make something for dinner that can be frozen, I double or triple the recipe and freeze the leftovers for lunch or future dinners. It's not that much work to make more and then we don't have to spend extra time or energy figuring out lunch. We'll also have leftovers from the night before if it's something that won't freeze well.
I'm not a fan of pre-packaged food but if I'm really in a bind, Evol burritos are decent. I've had a few of the Amy's frozen meals and they're not as good as real food but they're not as bad as Lean Cuisine.
Tired after a long morning of hiking and swimming.
Third vote for Amy's. They're my go-to "I'm too lazy to make lunch" item. I love all of them (Indian, noodle bowls, burgers, etc...). The "Country Cheddar Bowl" is my favorite. Amy's is an independently owned company, all vegetarian, all organic, no GMOs. Can't go wrong there! They have them in all my local grocery stores.
ETA: Amy's meals are not disgusting. I agree Lean Cuisine is digusting. I do admit I'm not a big fan of Amy's casseroles though. Too many flavors in one dish. But that's just me.
The veggie loaf is my absolute fave! It's my go-to comfort dinner when my H is out of town and I don't feel like cooking for myself. So delicious!

LOL it's funny that we all like different Amy's meals. I do not like the veggie lasagna, but I love the veggie loaf!
