So my garden is coming in with a lot of cucs. I'm not quite ready to make pickles yet. Anyone have any good recipes???
Re: cucumber recipes
Growing up my mom always made "cucumber salad" which had a creamy dressing. I don't have the recipe (though i'm pretty sure it contained mayo), but it was yummy.
The only ways i normally eat cucumbers is in garden salad, a greek-ish salad or gyros, with a sort-of taziki sauce. For gyros i mix plain yogurt, lemon juice, dill, pepper and feta (if i have it; if not, add some salt; i also like adding a little mint), mix together and add sliced or cubed cucumber. Serve over/in warm pita. For the greek salad i do the same thing, but put on top greens/cut romaine. Serve w/ tomatoes and/or olives. I leave the skin on, but you can peel them. Another variation of this would be to shred the cucumber and allow to drain, then mix into the yogurt mixture; serve with meat or falafal, or if you use greek yogurt it would make a good dip for other veggies.
ETA: There's also onions in the taziki.
