Anyway, I am finally feeling less sick and would like to actually cook dinner for my husband tonight...

Last night we had spaghetti and the night before I made Monteray chicken (super easy but very tasty and involves bacon).

I'll be on my own tonight so I probably will not make anything great and wonerful. Soup or a sandwich or a tomato/cucumber/onion salad, I'm not sure. I've been useing skinnytaste.com to come up with recipes.
If I had bacon I would make BLTs tonight, that sounds so good right now.
This week we're having:
- panko crusted haddock and sweet potato/corn
- pizza and salad
- salsa chicken, yellow rice, and corn
- chicken parm, pasta, green beans
- chicken quesadillas and corn
- hot dogs and baked beans
Thankfully it has cooled off, so I can use my oven! We're having Taco Bake tonight. It's delicious.

Last night I made the most amazing greek salad, I can't wait to have it for lunch and leftovers this week, Cherry tomatos, red & green bell peppers, cucumber, heart of palm, artichoke hearts, red onion, navy beans and feta. I made a greek dressing with red wine vinegar, olive oil, water and greek seasoning. So good!
My crockpot is making Hawaiian BBQ pulled chicken right now for tonight!
This all sounds delicious!

Funny you mention this b/c I just posted our weekly menu this morning our on whiteboard. Here it is:
Mon-chicken and orzo pasta salad
Tues-turkey and potato skillet
Wed-pasta & turkey meatballs
Thurs-leftovers
Fri-out with friends
FIL is coming to town tonight and my MIL is following a pretty strict vegetarian diet, which my FIL hates, so we're grilling steaks and having a spinach/red onion/blueberry salad.
We are having stuffed peppers for supper tonight.
I didn't get around to working up a menu for this week yesterday. I'll probably work on that this evening. I know I want to have tacos, and I want to make Ham Pot Pie one of these days.
Does anyone have a good/easy Enchilada recipe? I've been in the mood for some good mexican food lately.
I've made a baked enchilada. We got small tortillas and cut them down to fit in a square pan. Then just add whatever filling you want (chicken, veggies, etc) top each layer of filling with cheese and enchilada sauce, then for the very top put a tortilla with enchilada sauce and cheese. We usually precook the meat we're putting in so all you have to do is wait for the cheese to melt.
I'm not much help as I'm not feeling too great (AF) so I'm probably just going to have cereal and DH will have leftovers.
Last night we grilled hot dogs and potatos & had mac salad with it.

There are some other types of enchiladas aswell.
If I'm cooking, I make something I will like. If he won't eat it, he can cook himself something else. I try to work around his tastes, but I will not give up the things I like. DH has aversions to some of my favorite veggies and sides, so I just make sure we have some salad or something else on hand. If he wants it, he can make it.

Have you tried asking what he likes and then have him make a meal? Brian and I pick a day where he wants to cook (usually when I have to work late).
FWIW-DH used to HATE asparagus, zucchini, eggplant, spinach and green beans unless it was covered in something. Now, I grill the veggies with some olive oil and spices. YUM!
