It sounds like a pretty standard menu. I'd add a veggie tray and consider dumping the pinwheels. If there are no vegetarians you don't really need anything else. I might also think about one more salad- broccoli slaw is pretty simple.
You know the crowd, but I would add sangria.
I would offer another type of sandwich in addition to the chicken salad sandwiches unless that was your thought for including the pinwheels. I'd also add a vegetable crudit?s platter w/dip to include some vegetables and add some color/contrast to your table. Other than that, you've pretty much covered!
I think it sounds great. If you feel like you just have to have something else, maybe do a sampler of pecans - key lime, chocolate, salted, etc. But I really think everything sounds delicious.
I think the pinwheels serve as a good, filling alternative to chicken salad if there's anyone who doesn't care for it, so I'd keep them.

I always think crudite platters are a waste, they rarely get eaten in my experience, so I'd skip it.

Unfortunately, I, personally, am not a fan of pinwheels or anything with mayo. But if you know you're crowd, I think you're all set.
I agree that the crudite adds a little [inexpensive] color to the spread, and a little extra crunch to the plate.

I've never heard of a sweet pinwheel. I figured she was talking about sandwich wraps or hot baked savory pinwheels. I change my answer if she didn't mean one of those.
