Recipe rave - lemon icebox cookies!
These are so yummy and really easy to make. You pulse everything in your food processor, divide the dough into two, roll it into logs, wrap in plastic and freeze for 2 hours or overnight. Then you roll them in sugar, slice and bake.
My batch only made 36 cookies - not the 60 they say. I probably made my cookies too big. And it takes a bit of muscle to cut these when frozen but it's not too bad. But they turned out SO GOOD.
The recipe says the dough will keep in the freezer for up to a month so you can make these ahead of time and just pop them in the oven when you need cookies on short notice! Enjoy.
