Sunday baking/cooking

Now that we've all bookmarked the lemon ice box cookies... Did you all make anything else this weekend (or recently) that was interesting? Post a recipe if you had a home run.

Re: Sunday baking/cooking

  • I made this tiramisu cake from the Smitten Kitchen site. It was pretty good. I was a little disappointed it wasn't better, given the time and expense that went into it. I deliberately went light on the espresso and kahlua flavors because I made it for a birthday party and figured some people there wouldn't like the sophisticated flavors, but they were still pretty strong. Topped it with chocolate chips.

  • I made a Brazilian lamb stew with tumeric. It was very good and a lot of work. I've been doing gourmet cooking once a week for the past few months. It's been a hit! It's usually way too much work, but I must admit that enjoy it. Once a week is good. Not too overwhelming and we are always looking forward to next week's menu.

E, you should try my favorite plum cake recipe ever. This one via Epicurious. It looks pretty similar to yours (but it's beautiful. Oh, the presentation.)

  • Aside from the lemon cookies, I made chocolate chip/oatmeal/walnut cookies. I also made a tofu, snap pea and cashew stir fry for dinner last night - no recipe, just made it up.

Haven't made this yet but I have been thinking about making coconut ice cream, maybe blueberry ice cream, for DH's birthday :)

  • OK, I have one more to add. Made these cheesy cauliflower pancakes tonight. Yum! I would cut waaaay back on the cayenne next time though. I also used my immersion blender instead of mashing, which made them not hold together as patties at all, but I treated it like a scramble and it was yummy.

  • I made some Banana Chocolate Chip Oatmeal Cookies - from here:

    So GOOD!

  • I went ollaliberry picking this morning and made a quick berry pie for father's day. I just used the Pillsbury refrigerated dough, but it was really good!
