Cucumber recipes

Anyone have any good recipes that uses cucumbers?

We have a bunch we picked from our garden and I have no idea what to do with them.  The ones from last season I pickled and canned and we still have a few jars left so I really don't want to pickle anymore cucumbers right now.

    Cucumber and egg salad

    Cucumber sauce (like the kind that is served with gyros)

    Israeli Salad

  • I like to chop them up with some fresh tomatoes, basil, sweet onions, olive oil, balsamic, salt & pepper. It's a light and fresh side salad.

  • 3-4 peeled and sliced cucumbers
    1 12 to 14oz can sweetened condensed milk
    1 cup water
    1 tablespoon white vinegar (I use apple cider vinegar, b/c it's what I have.)
    Salt and pepper to taste.
    Mix all together.  Marinate overnight.  Serve cold.

    This is a family recipe.  They're kinda sweet and tangy.  So yummy.  If you saw my "I'm having cucumbers for dinner" post on fb....this is what I was talking about.  lol

    My mom makes something like this as well. It's either an Irish or German thing (I'm thinking German...) since one of her parents used to make it all the time. She uses sour cream instead of condensed milk and I'm not sure that she uses any water. She also uses raw onion. It's super yummy.

  • I suppose I should have said "family favorite." I didnt mean my family made it up. Hehe. My dad's family is German and he always says sour cream and onions. But my step grandma was Polish and is the one who made it all the time. The recipe I gave is the one she used.

    It must be German/Polish thing. J's family is Polish.

  • Im not much help since I dont cook that much anymore, but I love to cut up cucumbers into thin slices and then garlic salt and basil them and let them roast until a little crispy.  Its one of my favorite sides, I love cucumbers.

  • Not really a recipe but I have been adding sliced cucumber to the pitcher of water I keep in the fridge. It is very refreshing.
