Foodies: Easy Dinners

I'm looking for some easy dinners to fix. You know the kind I can make with a child hanging off of me. Stick out tongue

What are your favorites?

It's so not healthy for you but it's soooo good.

    That's what my husband is for ;p

    Ha!  yes yes... but Dan's not home when I want to fix dinner.  He gets home usually after 7 (stupid Philadelphia traffic...).  I always try to get dinner going before he gets home so we can eat by 7:30-8 but never works out and we end up eating most nights at 9/9:30.

    Other ideas, especially for the summer:

    - we buy a large package of ground beef, make the entire thing into burger patties. Individually wrap them (we use press and seal), stick them in a large freezer bag.  Then you can just pull out one or two whenever you need them and throw them on the grill!

    - no cook tomato pasta (emphasis on the no-cook part)

    other quickies I love:

    - Pasta con broccoli (ready in 20 minutes, one pot)

    - spicy carbonara

    - Hearty beef pasta

    I'm partial to the peppers and onions, but I think it would taste ok without.  Would be more like a spaghetti-lasagna taste.  Definitely easier to make than lasagna.

    Dan doesn't like those either. I don't know what you have tried or how sensitive your H is to onion but I sometimes substitute shallots for onions since it's pretty close.  I mince them and Dan doesn't notice at all and you still get the flavor.

    Yuuup.

    If I'm cooking and watching El at the same time, I usually pop some chicken in the oven along with some vegetables - lately it's been zucchini & yellow squash or asparagus. I cook the chicken and the vegs in separate pans, obvs. But I'll just toss the veggies with some olive oil and salt & pepper and roast them.  then I'll make some brown rice and serve the veggies and chicken over the rice.

    another one is homemade pizza - one I've been doing lately is a thin, storebought crust - spread with bbq sauce, cover with cheese, top with canadian bacon and pineapple. nom. You can also do chicken & red onion with the bbq sauce and it's really good too.

  • My go tos for quick, easy and no prep are crock pot dinners.

    Shredded chicken and salsa (4 chicken breasts, 1 pack/ 3T (if you do your own) taco seasoning, 1 large jar salsa)

    Shredded chicken and buffalo sauce (3-4 chicken breasts, 1/2 bottle Frank's)

    Pulled pork (simply rub before and drop in the pot with a coke)

    Other than that, things we always make:

    Burgers (we bulk pack meat and season, then freeze too)  We do these in beef, turkey and chicken.

    Tacos 

    Pasta and Meat Sauce

    Baked Chicken

    They're not always adventurous, but we're usually guaranteed that everything will be done in 30 min and taste relatively good.

  • I like tuna noodle casserole. Boil one pack egg noodles and put in 9x13 casserole dish. Add  3 cans tuna, frozen peas (how much depends on your preference), 2 cans of cheddar cheese soup (or cream of mushroom, but Danny doesn't like mushroom) mixed with 1.5 cans of milk. Pour over the noodles/tuna/peas and mix it up, add shredded cheddar to the top. Bake 1 hour at 350. It takes about 15 minutes to prep.

    I also love anything in the slow cooker. Put it in first thing in the morning and forget about it. 

    Michelle--can Jaime taste things like onion powder/ground pepper? Danny hates peppers and onions as well, but if I put onion powder/ground pepper in when it calls for those, he can't tell....or it just doesn't bother him as much. He's never said anything.

    Sad So sad.  Honestly, though, Dan is somewhat a picky eater.  It's hard to have a variety.
