I also posted this on WC, but I know a few of you recently posted about baptisms.
I offered to make cookie trays for my niece's baptism. There may be anywhere from 25-60 people and about 7-15 children. One child does have allergies, but we will plan for him accordingly. Other desserts will be served - cake and maybe a cheese cake or something like canollies or pasty.
How many types of cookies should I make?
I was going to make these chocolate cherry cookies that everyone loves and some basic chocolate chip, etc. I was hoping for a few unique cookies as well as some classic go to one. The cherry cookies are time consuming (but completely worth it) and I was hoping to find a few recipies that aren't as time consuming or something I can make the day before I need to bake it.
Any ideas or suggestions would be appreciated!

I like to do a mix of chocolate and fruit. For that group I'd probably do a single batch of 3 kinds (assuming a single batch gives no more than 4 dozen). It would be a lot for 25, but just right for 60. I'm an over maker though so take it for what it's worth.
I have a stupid simple no fail recipe for peanut butter blossoms. You can easily make the dough the day before. I also have a shortbread type cookie recipe that you use jello to flavor. It's nice because it's not too sweet and you have any number of flavors to choose from.
Another option might be to do some sort of "bar" cookie. The one with chocolate, butterscotch, coconut, graham crackers is easy and really good. The recipe is on a lot of the condensed milk cans or I can look it up. Lemon squares are always good in the summer too.
