Taking food to family reunion
My family (about 70ish people) all get together at the lake for the weekend of the 4th of July. It is about an hour drive from my house and we set the food out an picnic tables. Any ideas of what I could bring that doesn't need to be kept cold or specifically hot like a casserole? I know they are cooking brisket as the main meal and I know someone is making a pasta salad and deviled eggs. Any other ideas?

I have made this chickpea salad a few times and served it warm and cold- either way works so room temp would be fine too. I would refrigerate it before you bring it and bring it in a cooler, then once you put it out it should be fine. I've also added diced red or green peppers before, any veggie you like would probably make a nice addition to it!
2 cans garbanzo beans, drained and rinsed
? small red onion, diced small
4 ripe roma tomatoes, seeded and diced small
1 ripe avocado, diced small - add at last minute so they dont turn brown
2 persian cucumbers, peeled in stripes and diced small
handful of flat leaf parsley, roughly chopped
2-3 glugs extra virgin olive oil
juice from a lemon
Mix all of the ingredients together in a bowl.
Any number of desserts. If you want a side- slice some cucumbers, onion, and tomatoes and let marinate in a balsamic vinagrette. Cowboy caviar is always good too. My sil just did a variation- corn, black beans, fresh tomato, green onio, jalapeno, avocado, dressed in a little oil and vinegar.
Fruit salsa and cinnamon chips, fruit salad, a couple of watermelon just cut into wedges. If you have even a small cooler I just did peanut butter dip with apples, celery, and vanilla wafers that was a huge hit.
