What's your favorite camping food?

We're going camping for four days later this week  and we need to start thinking about food. We'll be car camping but space is still limited in our car and DH is kind of a camping purist so nothing too fancy, too time-consuming or too space-consuming  :P  We have some things we always make while camping but I wouldn't mind a bit of a change this year. We will have a small cooler but the less stuff we have to take that needs to stay cold, the better.

So what kinds of things do you like to cook while camping (for all meals), and what kind of snacks do you usually pack? Are there specific things you make at home and pack for meals, things that keep well? (I was thinking about making scones or muffins or something to pack for breakfast). Any ideas are welcome!

  • We usually bring a camp stove, and make breakfast burritos the first morning. The second morning (assuming we're leaving that day) we usually just bring pastries, like bear claws and stuff, for a quick and low mess breakfast.

    For lunch we usually make sandwiches, and have some sides like chips, grapes, strawberries, or whatever else looks tasty.

    For dinner we'll do things like hot dogs (can be roasted over the fire even), chili and pre-made cornbread (you can wrap it in foil and warm it a little in the campfire), BBQ tri-tip (which can also be used with any extra sandwich rolls we have), etc. There are lots of camping recipes that let you cook a whole meal in a foil packet (meats, potatoes and veggies) in the campfire. And since you can just eat the meal out of the foil packet, it's very low mess/clean-up. And you don't have to bring any special equipment. I know I've done some of these in the past, but I can't think of any particular fillings off the top of my head.

    For dessert we usually go with s'mores. But I also like making banana boats. You slice a banana (still in the peel) lengthwise down the top. Pry it open a little and stuff with toppings of your choice -- chocolate chips, nuts, caramel candies, peanut butter, raisins, coconut, or whatever floats your (banana) boat. Then wrap the whole thing in foil and stick in the bottom of the fire. It melts all the chocolate/candies and makes a really yummy treat.

  • When we camp, it's usually the one weekend all summer that we indulge in junk food.

    Pop tarts for breakfast

    Lunch meat sandwiches and chips for lunch, with cream soda

    Hot dogs or steaks for dinner

    We also like to pack "camp cookies", which means one of us gets to go to the store and pick out a pack of cookies and they become the official camping cookie of that trip. 

  • When we take the jeep out on trails we have to be pretty selective what we take. We can't be wasting all that precious beer room in the ice chest on food!!

    I have made fajitas.  I pre sliced some chicken breasts and veggies and then sealed them in plastic baggies and stuck down in the ice.  Then I grilled them on the campstove and ate with a pack of tortillas. 

    I have also made french bread pizzas and wrapped them in foil ahead of time to cook over the camp fire.  I think we ate these on the first day so that they werent soggy. 

    Lunches are usually pretty simple.  Sandwiches etc.  Ok, here is one of our redneck tricks that we have learned.  We will take frozen burritos or a hot pocket etc and wrap that sucker in foil and pop it on the engine of the jeep.  About 20 minutes down the trail and you have piping hot lunch.  Probably not what you had in mind with car camping Stick out tongue but it totally works and little to no cleanup.

    If youre looking for a snack thats completely naughty but oh so yummy, we have a friend that makes "graham cracker cakes"  They are just 2 graham cracker squares with a layer of homemade chocolate icing in between.  Soooooo good!

  • Marshmellows, Tri-tip for dinner & then reheat it for breakfast.

    The best breakfast is apple bacon & apple pie. YUMMY!!!!

  • We make beans, chili, chowder, posole or other soups ahead of time and freeze it. Then it serves as ice until it thaws (like day 2). We do nachos with all the fixins, quesadillas with grilled onions, and peppers (and carnitas) inside, and we've done shish-kabobs. For breakfast we've done french toast, pancakes, soyrizo con huevos, burritos and oatmeal. For dessert we love s'mores, hot chocolate, and strawberry shortcake.

  • We're going camping later this week too and I can't wait. We usually eat better while camping than we do when we're home! It's easy to do...just pre-prep the food as much as you can before you leave. PP mentioned fajitas, which are great. Pre-slice a bunch of peppers and onions and stick them in a ziploc, and cut up chicken and stick it in another ziploc with your marinade. You can also make white rice and add a jar of salsa to the water for easy mexican rice, and heat up a can of beans for another side. Another of our favorites is polenta. It's super easy to use those pre-made ones that come in the plastic tube because they don't require refrigeration. Just slice it up and heat it in a pan while you cook the rest of your meal. Or it's almost just as easy to make a pot from scratch (I'm planning to do this for dinner this weekend).

    We do build-your-own sandwiches for lunch. Snacks are chips & salsa, or cut up veggies & hummus, etc.

    We do eggs, bacon/sausage, potatoes or blueberry pancakes for breakfasts. You can mix up the batter ahead of time and keep it in a large ziploc in the cooler until you're ready for it, then just cut a small hole in the tip and pipe it onto the griddle. French toast is also awesome (big thick Texas toast makes the best). You can also do individual scrambled egg servings...crack a couple of eggs into a small ziploc and each person can add whatever they like to it, then seal it, squish it around a bit to mix and throw it into a pot of boiling water for a few minutes.

    As you may have gathered, ziploc baggies are my best friend when camping so have a bunch in a variety of sizes handy. Have fun!

    We usually make breakfast burritos (or just burritos). I bring some small new potatoes, wrap them in foil and throw them in the fire the night before. Then we scramble eggs and cheese if we have it and eat them in burritos.

    We usually do kebobs too. I cut up the tofu and put it in its marinade in a tupperware container, then add onions, cherry tomatoes, etc. while we're up there. Grill til crispy.
