Motivate me with healthy recipes, please.
I need to lose some serious lbs before we go to the beach. I've been saying this all summer and haven't, and of course this weekend didn't help. I've got 3 weeks. I need diet inspiration. Any healthy recipes to share?

I stumbled upon an amazing lunch last week, totally on accident. I pulled a bunch of veggies out of the garden - green beans, snap peas, tomatoes, broccoli, bell pepper. Blanched off the green beans, snap peas, and broccoli, cold shocked them. Tossed it all in a tupperware, topped it with just a little herbed goat cheese. Tossed it all with a little Italian dressing at lunch time.
The dressing combined with the goat cheese and coated all the veggies in wonderful creamy deliciousness! Totally tasted indulgent and bad for you. That's my kind of healthy recipe!
can't wait to make it again with more veggies from the garden.
Eating clean is what works for me.
Grilled pizza using wheat naan bread, veggies, and some low sodium cheese.
Strawberry salad with field greens, sliced strawberries, almonds, and cucumbers, I make my own basalmic drsg.
I had salad this weekend which was cold quinoa, edamame (blanched), diced cucumbers, shredded carrots, and newman's own organic asian sesame drsg.
As a high protein and nutrient snack, I make my own spinach dip with frozen choped spinach (microwave and drain), 1 container ff chobani greek yogurt, 4 oz neufchatel cheese, and 1 tsp minced garlic. Mix with hand mixer. Use cold veggies or wheat pita chips to dip.
I also make my own popsicles using frozen berries, chobani raspberry yogurt and a little juice.
I've been really concentrating on making healthier lifestyle changes, and the biggest thing I've done is plan out every single aspect of every single meal.
I have been cooking ahead to try to stay on track with meals away from home.
Things that reheat well and go with lots:
Neuner's Tequila Lime Chicken
Chicken Picatta (made with WW flour and olive oil)
Roasted Veggies (all kinds of bell pepper, onion, pineapple, asparagus, etc. on the grill)
Turkey Burgers (for more fun, find recipes for Thai burgers [mine have shredded carrots, peanut sauce and hoison sauce in them], Steakhouse burgers [Montreal Steak seasoning, fresh herbs, green onion slivers], etc.)
I pair the above with:
Brown Rice (made in bulk via rice cooker)
Low Cal Egg Noodles
Salad
Potato Buns (surprisingly fewer calories and more filling than a traditional bun)
AND, most importantly for me right now, max out on fruit. It is good and in season, no reason not to.
Stand up for something you believe in.
My favorite summer recipe:
Caprese Salad
1 pint grape tomatoes, halved
1 cucumber, peeled and chopped
1 cup fresh mozzarella cheese, cubed (or you can get the little pearls which is what I like)
1/4 cup chopped fresh basil
2 tbsp. EVOO
salt & pepper to taste
Toss it all together and enjoy! Nom nom nom.
Aww thanks! We'll see how I do after this past weekend, but so far so good.
This is my second go-'round, so I knew what to expect. I'm loving the new system, though, especially when veggies and fruits = 0!
Having Chris do WW with me helps when it comes to shopping, because then we'll both want to eat the low-fat, low-cal stuff rather than buying "real" stuff and having temptation be there.
I'm not a cook, but I aim for balance when I do eat something - lean proteins, low-fat cheese, veggies, fruits. Salads with grilled chicken are the best.
If you ever have a specific ingredient and want any healthy recipes, I can do a search of my WW database and pass it along!
