from my food blog: purslane and garlic scape pesto

hey green ladies :)
I thought you might like this blog post.  I wrote about purslane, a plant which is considered a weed in the US but is actually very good for you, having the highest level of omega threes of any plant!  It grows everywhere, maybe you've seen it.  Here's some from my garden:

So I made a pesto using it and garlic scapes.  This is super easy and freezes well so you can eat it all winter long!

  • Ditto, I love garlic scape pesto.  I make several batches every year since the season is so short, and freeze it in plastic Ziploc bags.  The bag will thaw in a bowl of warm water by the time the pasta's done cooking.
