Overflow of eggplant...any recipe ideas?
I have a huge overflow of eggplant and I've not only shared with everyone I know, but I still have a counter covered in eggplant! Any great recipe ideas? So far DH and I have only tried eggplant parmesan.

My favorite way is to marinate it in olive oil, red wine vinegar, mint (yes, sounds weird, but it's good) & oregano..then grill & eat with pita & hummus.

I wish my garden would produce an overabundance of eggplant! I seem to only get 1 or 2 from each plant every year. I have an eggplant recipe in my blog:

Eggplant and mint is a classic combo. I will marinated in any vinigrette and grill.
I also roast eggplant (Quarter it and put in a hot 400 degree oven for 45 minutes. I scrape the center from the peel and puree the center. I put this in 1 cup increment in freezer bags to use in baba ganoush and eggplant stews all year long. Freezing it will make it a little more watery so you will have to adjust the cooking times to cook off the extra water.
This works great in the oven too, without the frying.
I use the italian crumbs and the kids love it. I have used only zucchini since it makes a smaller amount, but we love it.
Congrats on a bountiful harvest. Here, everything burns up so we don't even try anymore. I'd love to have a harvest like that. I'd love to be your neighbor and help you out.
I did the google thing and found out you can freeze eggplant. That's what I'd do in your case.
