I'm hosting a Thirty-One party in a week and a half for a friend who just became a consultant. I invited like 26 people on facebook, figuring maybe 8-10 people would come...well...it's up to like 15 already! (We're all teachers, and I guess it's been a boring summer!) So, what should I make for lunch? I offered lunch hoping to convince people to come...oh my!
One idea I had was getting chicken salad and shrimp salad pre-made (super yummy) from the grocery store and then make a salad or fruit salad? Of course with a yummy dessert.
I'm open to baking/cooking/buying...but I just don't know what to serve!
Suggestions please!

Store-bought chicken and shrimp salad for that many people will be expensive. A 1 lb tub of the good stuff from a restaurant here is $18, but maybe yours is cheaper.
I saw this recipe the other day and saved it. Looks fabulous for just that sort of thing.
Have out cheese & crackers, veggies & dip, a couple sandwich options, fruit salad, a green salad, a cold pasta side, and something simple like cookies and brownies for dessert.

Agreed with tarheels that buying may get pricey. Something fun might be a salad bar- lettuce, spinach, carrots, celery, cucumber, green onion, shredded cheese, peas, poached chicken, cubed ham, hardboiled egg, a few dressings and some good bread.
Otherwise I'd probably premake some wraps, hummus and veg tray, broccoli tortellini salad fruit tray with dip.
I saw the cutest dessert I can't wait to try. They called it candy pizza. It looked like they made a round rice crispy treat, topped with melted chocolate that had reset, then M&Ms and other candies. She cut it into wedges. Soooo cute.
